This is our breakfast this morning. Perfect mommy and me meal to start the day. Super easy and didn’t take much time to prepare. The best part is the little princesses not only eat well, but also have so much fun making their own food.

Hong Kong Style – Peanut Butter Sauce Recipe
Hong Kong style peanut butter sauce is very essential to my favorite street food – rice noodles (Recipe here). Actually, it should be sesame sauce but for cost and efficiency reasons, most places (or all) only serve you peanut butter sauce. If you ever find someone serve the real sesame sauce made with real sesame seeds, you are in luck and probably should go buy a lottery ticket. This sauce is so simple and easy to made, I almost want to put it in the rice noodles recipe and call it a day. However, I do like my recipes sorted nicely in the blog, so here you go.

Hong Kong Street Food – Rice Noodles Recipe
Hong Kong is a food heaven with countless delicious food, from street food to Michelin starred restaurants, you can pretty much taste the world in this little city. One of my favorite street food, some times serve in restaurants (dim sum or congee restaurants), is rice noodles loaded with sweet soy sauce, peanut sauce and hoisin sauce (the original “sweet sauce” is not available in US), sprinkles with some toasted sesame, the most traditional way to serve it. If you like it spicy, add a few drop of Sriracha wouldn’t hurt.
Iced Mocha Recipe – Hazelnut Coffee Ice in Chocolate Almond Milk
Make too much coffee? Freeze them in ice cube tray, add into your favorite chocolate milk and you have delicious iced Mocha instantly. Or you can add it into hot coffee and turn it into iced coffee without diluting. A great leftover makeover for coffee lovers. (This is not a tradition Mocha recipe, I cannot drink Espresso yet, working on it.) Continue reading
Leftover Makeover – Creamy Potatoes Soup Recipe
Do you see leftover as headache or quick fix to the next yummy meal? If reheating them without a makeover, I bet most people won’t enjoy it. However, if you add a few new ingredients and make it into something new, it will save you time, money and make room for your refrigerator. Today, I transformed the leftover mashed potatoes (you can use baked potatoes too) into creamy potatoes soup.

Easy Coconut and Blueberries Crepes Recipe – Breakfast in 15 minutes
Since the first success with my crepe recipe, this easy and fast breakfast became my new favorite. We also started to drink more almond milk and soy milk, instead of regular 2% milk in the last few weeks, because I suspected Alexis is allergic to milk. Almond milk and soy milk are lower in calories and sugar content compare to 2% milk but loaded with lots of vitamins and taste great. That is how I come up with the coconut and blueberries crepes, like usual, create something healthy, easy and yummy out of my refrigerator.
Easy French Onion Soup Recipe (3 ingredients in 30 minutes)
I tried French onion soup once in a chain restaurant 7 years ago, that was the first time and last time for me. Since that bad experience, I told my husband this soup would never make it in my kitchen. One day out of nowhere, my husband had this soup in mind and requested it for dinner. So much for the “never” like many things, I made this super easy and crazy good French onion soup to go with a spring mix salad. It was a hit and changed my opinion of French Onion Soup forever. My daughters loved it so much, they asked me to make this soup just a few day later. This healthy and yummy soup need 3 ingredients only and take less than 30 minutes from scratch to the table.

Homemade Pink Kettle Popcorn Recipe
It was Alexis big day yesterday. She is now 4.5 years old and passed the evaluation to move up to the next level in gymnastics school, which means her hard work and all those practices at home (she did it all by herself with anyone asked her to, what a self-motivated little one) had paid off. She was so proud of herself and so did mommy. She improved a lot within the last 2 weeks, even I was impressed. To celebrate her little milestone and show my support for her hard-working, I arranged a movie date with the girls (we watched Rapunzel), served them these girly and pretty pink kettle popcorn for snacks. Everyone had a good time and they said it was the best day ever.

Puffy Cheese Sticks – Easy Appetizer in 30 minutes
My husband wanted to have chicken pot pie but don’t want the puff pastry on top of the soup bowl like traditional one. So I turned the puff pastry sheets into this tasty appetizer and served as dipping bread sticks on the side. The girls loved it so much and finished them within 5 minutes.
