Fluffy Pancake Recipe (Make 8)
I have been trying to figure out how to make fluffy pancake for a long time. Saw this method on TV from American Test Kitchen and Iron Chef Michael Symon from the Chew, so I decided to give it another try. This recipe requires to separate the eggs into whites and yolks, whisk the whites and fold it in at the end. Sound like should be more fluffy, however, when I used it to make the Hong Kong style egg waffles, I didn’t notice enough different, so I decided not to bother with the extra step. After created 2 okay pancake recipes, I made up 2 other recipes today and one of them using this whisk egg whites method. To my surprise, the pancakes came out really fluffy and soft, much different than the other one. (Compare photos at the very bottom of this post if you are interested)

Banana Walnuts Bread Recipe
Banana is one of my daughters favorite fruits, so nutritious and convenient. It is a great ingredient to add in bread, smoothies or baked goods. This bananas walnuts bread has a sweet crispy crust, I like a dense feel of this bread, if you like a lighter and softer bread, use 1.5 cups of flour instead of 1.75 cups. I used 1.5 cups for cupcakes size banana bread, if you like to try that, cut the cook time in half to 30 minutes, the smaller the bread, the faster it cooked. To make the crust crispy, a cast iron pan is essential, increase the temperature to 375F at the last 5 minutes, will make the crust even more crispy. Rest 10 minutes before serving, the crispy crust only stay for a few hours, overnight baked good never taste as good as it fresh out of the oven.

Steamed Chinese Sweet Sesame Buns Recipe
Steamed sweet sesame bun is my favorite bun in Dim Sum restaurant since my dad introduced it to me when I was young. It is so sweet and flavorful in one little cute bun.
I hadn’t been able to locate them anywhere nearby in USA (restaurants or frozen products). So I tried to create it with the memory of my taste buds, it turned out really good. When I had it back in Hong Kong, the sweet sesame filling was lava-like and really smooth. This recipe makes a crumbly filling (I like the texture) instead of creamy and lava-like filling. Steamed Chinese Biscuits Recipe
This steamed Chinese biscuits is the base of many other steamed Chinese buns, real easy to make. If you are comfortable with it, hand knead it. Or not, use a stand mixer or hand mixer with a dough hook, turn on low speed (1-2) until dough formed, hand knead a few times. It will be just as good.

Waterless Poached Egg Recipe (Steam oven version)
Poached eggs are not difficult to make at all, drop an egg in a pot of hot water with some vinegar, sounds super easy, right? But a good looking poached egg is not easy to make at all. Now, I find the most convenient way to make it pretty without the water, without the uneven edge of the egg white and it is perfectly cooked every time. The secret is my new kitchen toy – Steam Oven.

Hong Kong Street Food – Rice Noodles Recipe
Hong Kong is a food heaven with countless delicious food, from street food to Michelin starred restaurants, you can pretty much taste the world in this little city. One of my favorite street food, some times serve in restaurants (dim sum or congee restaurants), is rice noodles loaded with sweet soy sauce, peanut sauce and hoisin sauce (the original “sweet sauce” is not available in US), sprinkles with some toasted sesame, the most traditional way to serve it. If you like it spicy, add a few drop of Sriracha wouldn’t hurt.

Easy Coconut and Blueberries Crepes Recipe – Breakfast in 15 minutes
Since the first success with my crepe recipe, this easy and fast breakfast became my new favorite. We also started to drink more almond milk and soy milk, instead of regular 2% milk in the last few weeks, because I suspected Alexis is allergic to milk. Almond milk and soy milk are lower in calories and sugar content compare to 2% milk but loaded with lots of vitamins and taste great. That is how I come up with the coconut and blueberries crepes, like usual, create something healthy, easy and yummy out of my refrigerator.
