上周,肥仔老公買了碎牛肉和意式肉腸,前後煮了漢堡包和意式肉腸意粉.昨晚,決定用廚餘做迷你意式肉丸,細細粒容易食,不用焗好後切成小粒給小公主進食,烹調時間又短一點,合乎快靚正原則.每個牌子的意式肉腸味道也不同,最好買常吃的牌子,調味時可因應肉腸的味道和個人口味,加減香草或鹽的份量.
迷你意式肉丸食譜(約做45個)
材料:
碎牛肉 1.25磅
意式肉腸(去外層) 3條
蒜蓉 2茶匙
雞蛋 1隻
粗鹽 1茶匙
意式香草麵包糠(按食譜) 1/4杯
帕馬爾芝士碎 2湯匙
歐芹乾 2湯匙
做法:
1. 將焗爐預熱至華氏375度.
2. 在大碗中,用手將所有材料混和.
3. 用手取出小量肉餅,搓成1吋大的肉丸,平均放在已墊錫紙的金屬焗盤上.(注意:肉丸不要搓得太實,成形即可)
4. 放入焗爐中層,焗10分鐘.然後將焗盤前後反轉再焗7分鐘,或直至熟透.
5. 將肉丸配合意粉和意粉醬伴食,可隨個人口味灑上芝士食用.

can make without 意式肉腸ma? just use mince beef is ok?
[版主回覆08/18/2012 11:50:55]當然可以啦,但味道無咁好.你可以將肉腸改為碎豬肉,但要加入其他香草如Basil, sage, thyme等等.才可做出類似的味道.
The sausages would break easily when you mix them? I suppose we can make them into hamburger buns too, right?
[版主回覆08/22/2012 06:23:08]The sausages are very easy to mix, just need to pill the casing off. You can totally make it into a burger easily, it will be a meat loaf burger. I usually just use ground beef for burger, then season with salt and pepper on both sides, add toppings and sauce on top, easy and yummy.
