Chinese barbecue pork (known as Char Siu) is one of my favorite food. I usually order it as a meal which comes with steam rice, sweet soy sauce, green onion and ginger mixture, the perfect combination.
Chinese Barbecue Pork (Char Siu) Recipe:
Ingredients:
Pork Ribeye (room temperature) 4 pieces (1/2 inch thick)
Char Siu Sauce (Lee Kum Kee Brand) 4 tablespoons
Vegetable Oil 1 tablespoons
Cookware:
Le Creuset 5 quarts Braiser (also known as 32cm Buffet Casserole)
Steps:
1. Rinse and pat dry the pork chops, brush 2 tablespoons Char Siu sauce on the upper side.
2. Heat up the oil in braiser over medium heat until very hot.
3. Sear the pork chops (sauced side down) and lower heat to medium low immediately, cook for 7 minutes or until golden brown.
4. Brush remaining sauce on the other side of the chops while cooking.
5. Flip the chops, get the dripped sauce in the braiser with the same brush, brush while cooking for the next 4 minutes.
6. Repeat flipping and braising (brushing with sauce) every minute, until chops are fully cooked and sauce is thickened, about 15 minutes. Heat off.
7. Let the meat rest for 5 minutes. Pound them a few times with a big clever or frying pan (tenderize the meat), slice them in a 30 degree angle and serve.
