健康煮意 – Fusion生菜包食譜

最近很少寫食譜,因為又中又英實在很花時間,正在苦惱應該要把中英文網誌分開處理,但我真的可以有這麼多時間打理2個blog嗎?我的英文blog基本上是很久也不更新一次,至今還不到20篇文章,真的懶得過份.難得有心機寫一篇食譜,就寫昨晚煮的這個健康煮意 – Fusion生菜包.這個生菜包的饀料可算菜肉均稱,中西合壁,用上了中西菜的材料,中式的調味料,西式的廚具和煮法,非常fusion呢.若不想用生菜包著吃,直接把饀料配白飯一起吃,美味依然,簡單快捷.Fusion生菜包食譜

材料:
熱飯                       4碗
大甘荀(切細粒)     1條

西芹(切細粒)         3條
生菜(切半)             1個
葱花                       1杯
蒜蓉                       1湯匙
歐芹(新鮮,切碎)     半杯
洋葱(切細粒)          半杯
豬肉(攪碎)              1磅
菜油                        2湯匙

調味料:
鹽                       1茶匙
蠔汁(製法見下)  4湯匙

蠔汁材料:
蠔油     1湯匙
水         3湯匙
糖         1/4茶匙
做法: 將所有材料混和.

醃料:
鹽             1/2茶匙
雞粉          2湯匙
白胡椒粉  1/4茶匙
菜油          1湯匙

做法:

1. 將材料洗切乾淨備用.生菜開半並分隔菜葉.

2. 將豬肉和醃料加入食物處理器攪碎(若使用已攪碎豬肉,加入配料混和即可),醃5-10分鐘.

3. 在LC 24cm Risotto中,加入菜油和蒜蓉並以中火加熱.聞到蒜香後,加入洋葱炒1分鐘.

4. 加入西芹,甘荀和鹽,煮至洋葱變透明(約3分鐘).

5. 混入豬肉碎,調低至中小火,煮至豬肉8成熟.

6. 加入蠔汁,歐芹碎和1/2杯葱花,攪勻後加蓋焗2分鐘或直至熟透.

7. 將菜肉饀,白飯和葱花放在生菜上,包好後即可食用.

Fusion Lettuce Wrap Recipe

Ingredients:

Steamed Rice                           4 cups
Big Carrot (diced small)            1 carrot
Celery (diced small)                   3 stalks
Lettuce (halved)                         1 head
Green Onion (chopped)             1 cup
Garlic (minced)                           1 tablespoon
Parsley (fresh, finely chopped)   1/2 cup
Onion (diced small)                     1/2 cup
Ground Pork                                1 pound
Vegetable Oil                               2 tablespoons

Seasonings:

Salt                     1 teaspoon
Oyster Sauce     See recipe below

Oyster Sauce Recipe:
Oyster Sauce       1 tablespoon
Water                    3 tablespoons
Sugar                    1/4 teaspoon
Step: Whisk the ingredients until combined.

Marinade:
Salt                                1/2 teaspoon
Chicken Powder            2 tablespoons
Ground White Pepper    1/4 teaspoon
Vegetable Oil                  1 tablespoon

Steps:

1. Rinse and cut all ingredients. Halved the lettuce and separate the leaves carefully.

2. Cut Pork into small pieces. Process pork in a food processor with the seasonings, let it sit for 5-10 minutes.

3. In a LC 3.5 quarts round wide oven (also called Risotto), add vegetable oil and garlic over medium heat until fragrance. Add onion and cook for 1 minute.

4. Add celery, carrot and salt, cook until onion is transparent (about 3 minutes).

5. Add ground pork, lower heat to medium low, cook until pork are medium well.

6. Add oyster sauce, parsley and 1/2 cup green onion, stir well and cover for 2 minutes or until it cooked.

7. Put pork and vegetable, steam rice and green onion on lettuce leave, wrap it together and serve.
