小小入廚心得
新鮮香草的味道與意粉配搭在一起,簡直是天衣無縫,如果能夠買到香草種子或盆裁,不妨買幾種常用的香草回家種植,價錢應該較買幾瓶乾香草更化算,例如迷迭香(Rosemary),鼠尾草(Thyme),歐芹(Parsley)和羅勒(Basil).聽說香港買乾香草要數十元一小瓶;香草盆裁應該差不多價錢,而且極容易打理,只需澆水就會生長,當然定時加肥會令它們長得更好更茂盛.即使不常用,有點綠色植物在家中也能加添生氣.
小小營養學
蕃茄有減低炎症的功效,又有助預防某些類型的癌症和心血管病,是很便宜又有益的食物.橄欖油與蕃茄是很好的配搭,因為兩者同時食用會令茄紅素更易被人體吸收.而且,煮熟的蕃茄較生蕃茄更有益,所以煮蕃茄時用橄欖油是很美味又健康的煮法.
香草蕃茄蘑菇扁意粉食譜
材料:
扁意粉 1磅
水 一大鍋
鹽 3湯匙
初榨橄欖油 2湯匙
細蕃茄(切粒) 6個
洋葱(切條) 1個
蒜蓉 2湯匙
蘑菇(切片) 8安士
蕃茄膏 1/4杯
歐芹(切碎) 1.5湯匙
羅勒(切絲) 1.5湯匙
做法:
1.將材料洗淨切粒和切絲備用.
3. 煮意粉時,另在花花鍋(中型鍋)加入橄欖油以中火燒熱,炒洋葱約1分鐘,加入蒜蓉再炒一分鐘.
4. 加入蕃茄粒煮至出水.
5. 加入茄膏拌勻.
6. 加入蘑菇煮約1分鐘後熄火.
7. 伴入大部分香草攪拌,蓋好焗2分鐘.(剩餘香草作裝飾用)
意粉上碟法: 用食物鉗取起小撮意粉,順時針/反時針方向一邊旋轉,一邊徐徐放在碟上,加上意粉醬即成.
健康好味又快捷的晚餐,連煲水時間都只是30分鐘.

your husband is Italian, so he must have very high standards for pasta dishes. Are you going to make your own fresh pasta soon?
[版主回覆06/20/2013 22:46:30]He expects the pasta in a certain way, and he loves homemade pasta. I rarely make fresh pasta for him thought. The more eggs, the better the pasta taste which require 4 or even 7 eggs, that are too many eggs in a meal. Plain pasta without egg is more like regular noodle, so I usually just buy them, haha. (I admit I am quite lazy about this one)

6月初買了一包羅勒香草種子回家. 現在家里有30多棵快滿月的小羅勒BB. 等待買給喜歡香草作食材的朋友, 有一部份預留給家人和親戚朋友.
